This is maybe not everyone else’s way of doing it but I have done this for several years and it works fine and takes a lot less time, I do it for 10 minutes at 10 pounds pressure! You do not have to vent the canned for 10 minutes before you put in the weight either it works fine, when it starts boiling I put the weight in and start counting! After the ten minutes turn off the heat and let stand till all pressure is totally gone usually about an hour maybe longer, before you try to open the canned! I have been canning for over 30?years now! This is only my way of doing it that works!
